This meal was inspired by an awesome deal I scored on kielbasa this week at Publix! But deal or no deal, who doesn’t love a good sheet pan dinner? You can’t really go wrong here. It’s an all-in-one meal that can be catered to your family preferences while minimizing kitchen clean up afterwards. That’s a win all around!

I love using potatoes in sheet pan meals because they are a frugal way to fill up hungry teens at my house. I threw in broccoli, onions, and garlic this time around, but you can use whatever veggies you love and happen to have on hand.

I paired this Kielbasa Sheet Pan Dinner with some homemade whole wheat french bread because we’re trying to eat more whole grains (instead of processed refined grains) to address some health issues in our family (and let’s be real — store-bought whole wheat bread usually isn’t that great). However, if you’re short on time or don’t like to bake, I’d recommend hitting the reduced bread cart at Walmart (usually not in the bakery but in the back of the store) where you can almost always get french bread for well under a dollar a loaf!

Homemade French Bread

2 packages Eckrich Sausage (Publix) — $2.60

6-8 potatoes (Aldi – $3.99 for 10lbs) — $1.33

1 package broccoli crowns (or whatever vegetables you prefer) (Aldi) — $2.34

3 cloves garlic, minced (Aldi — $1.75 for 3-ct package) — $0.18

1 onion (Aldi — $2.09 for 2 lbs) — $0.30

Garlic salt, to taste

5 1/2 cups flour (I used a mix of white and whole wheat – Lidl) – $0.68

2 cups warm water

2 1/2 teaspoons sugar

2 1/2 teaspoons salt

1 Tablespoon instant active yeast (Sams – $6.88 for 2 lbs) — $0.08

Olive oil for drizzling

Total for Dinner: $7.51 (Serves 6-8+)

How to Make Kielbasa Sheet Pan Dinner with Homemade French Bread:

1. Follow the directions here for making Homemade French Bread. I used a combination of whole wheat and white flour.

To make things easier, I always use instant active yeast and skip the process of proofing the yeast. I just mix everything together (except I don’t add the full amount of flour at the beginning — just a few cups’ worth) until it’s well combined. Then I gradually add in more flour until the dough is the right consistency.

2. While the dough is rising, preheat the oven to 400 degrees.

3. Wash and scrub the potatoes. Cut into chunks.

4. Peel the onions and cut into slices.

5. Line two baking sheets with parchment paper and spread the potatoes, onions and garlic in a single layer in the pans. Drizzle with olive oil and sprinkle with garlic salt.

6. Bake for 20 minutes. While the potatoes are baking, continue with the instructions here for making Homemade French Bread.

7. Cut the sausage into slices. Wash the broccoli and break into bite-size florets.

8. Remove the pans from the oven and add the sausage and broccoli. Stir together and drizzle with more olive oil and add more garlic salt to taste.

9. Bake for 20 more minutes or until starting to brown. Remove from oven and serve with buttered French bread.

This easy sheet pan dinner features kielbasa, potatoes, and your favorite veggies all roasted together on one pan — minimal prep, minimal cleanup! The potatoes make it hearty and budget-friendly, while the veggie mix is totally flexible based on what you have on hand. Pair it with a crusty loaf of whole wheat French bread for a complete, satisfying meal the whole family will love.

Homemade Whole Wheat French Bread Ingredients

5 1/2 cups flour I used a mix of white and whole wheat – Lidl – $0.682 cups warm water2 1/2 teaspoons sugar2 1/2 teaspoons salt1 Tablespoon instant active yeast Sam's – $6.88 for 2 lbs — $0.08

Instructions

In a large bowl or in a stand mixer with the paddle attachment, combine the warm water, yeast, sugar, salt, and 2 cups of flour. Mix by hand or on medium-low speed.
Knead in the remaining flour, 1/2 cup at a time until the dough is smooth but not sticky. (The exact amount you use will depend on your climate, but it’s usually around 5 cups).
Rub the dough ball with olive oil and cover the bowl with a tea towel to rest 15-30 minutes, or up to 1 hour.
Divide the dough in half. On a well-floured counter, roll one half of the dough into a rectangle that measures around 15 inches. Then, starting from the long side, roll the dough into a cylinder. Pinch the seams closed, tuck the ends under, and place your loaf on a baking sheet. Round the edges and cut three diagonal cuts on top of the loaf.
Repeat this process with the second half of dough.
Cover the loaves lightly with a tea towel and let them rise 30-60 minutes (or longer if you have the time!).
Preheat the oven to 400 degrees.
While the dough is rising and oven preheating, wash and scrub the potatoes. Cut them into chunks. Peel the onions and cut into slices.
Line two baking sheets with parchment paper and spread the potatoes, onions and garlic in a single layer in the pans. Drizzle with olive oil and sprinkle with garlic salt.
Bake for 20 minutes. While the potatoes are baking, cut the sausage into slices. Wash the broccoli and break into bite-size florets.
Remove the pans from the oven and add the sausage and broccoli. Stir together and drizzle with more olive oil and add more garlic salt to taste.
Return the kielbasa pans to the oven and also add the baking sheet with bread loaves to the oven. Bake both for about 20 minutes, or until the vegetables begin to brown and the bread loaves’ tops are golden brown. The loaves should sound hollow when you knock on them, if they are done.
